Bursting Tomato & Za'atar Bruschetta

The classic Italian bruschetta just got a Middle Eastern twist!

Ingredients

  • 1 punit cherry tomatoes
  • 4 garlic cloves
  • 1 tbsp za'atar
  • 1 handful of fresh thyme
  • generous pinch of salt
  • 4 tbspolive oil
  • 1 tub cottage cheese
  • slices of whole-wheat sourdough

Za'atar is one of those spices that can take any average dish and add a delicious, earthy flavour. Thrown on a bruschetta it's a really special thing. This might be one of the best things you could ever put on toast, equally perfect served at a dinner party or for a quick lunch.

Method

  • Add all your tomatoes, or as many can fit, into a cast iron or oven-proof pan, along with the garlic, thyme, za'atar and olive oil. Salt well then roast in the oven high, on 200°c for 15-20 minutes, until bubbling, soft and a little charred.
  • Whip some cottage cheese in a blender, until smooth and silky - this will take about 10 seconds!
  • To plate the dish, grab a slice of good sourdough, or your favourite bread, give it a light toast and spread on those roasted garlic cloves. Then a spoonful of our whipped cottage cheese, followed by the roasted tomatoes. Spoon on a bit of sauce and dust with a little more za'atar, and enjoy!
