Pistachio Cookie Chocolate Bars

Ingredients

  • 35 gPistachios
  • 110 gFlour
  • 1/4 tspBaking Powder
  • 1/4 tspBaking Soda
  • 1/4 tspSalt
  • 84 gSoftened Butter
  • 80 gLight Brown Sugar
  • 25 gGranulated Sugar
  • 1 Egg Yolk
  • 1 tbspVanilla Extract
  • 35 gPistachios (Roughly Chopped)
  • 150 gWhite Chocolate
  • 150 gDark Chocolate
  • Green Food Colouring

Forget chocolate covered cookies, we present to you chocolate cookie bars! Pieces of crunchy pistachio cookie encased in white and dark chocolate.

Method

  • Preheat the oven to 160ÂșC.
  • Add the pistachios to a food processor and pulse until very finely ground and almost a nut butter consistency. Set aside.
  • In a medium bowl, whisk the flour, baking powder, baking soda and salt together. Then set aside the flour mixture.
  • In a large bowl, cream the butter, brown sugar and granulated white sugar together with an electric hand mixer on high speed until light and fluffy, 2-3 minutes. Add in the egg yolks, vanilla extract and ground pistachios and mix on medium speed until pale in color and fluffy, 1-2 minutes.
  • Add the dry ingredients to the wet ingredients and mix on low speed just until combined then add in the chopped pistachios and fold into the dough.
  • Melt white chocolate and dark chocolate in separate bowls. In chocolate bar moulds place in pieces of cookie dough and bake for 10 mins. (Be aware the cookie dough will spread so keep that in mind when arranging)
  • Once baked, fill the empty spaces with melted chocolate and place in the fridge or freezer to set.
  • Remove carefully and enjoy!
