Spam is a versatile ingredient, and grating it then baking it gives you an amazing end result very much like the crispy, BBQ sauce soaked bits of pulled pork that are obviously the best bits.
Preheat the oven to 200°C. Remove the spam from its cans and use the rough side of a box grater to grate it like a block of cheese.
Place the grated spam on a large baking tray, drizzle with oil and bake for around an hour until really crispy. Toss with BBQ sauce and bake for a further 10 minutes.
Meanwhile, assemble all the other ingredients. Fry the fries just before the spam is ready and toss the with the cheese and all the other bits. Serve with some artful lines of mayonnaise and BBQ sauce and a few more chives for class.
