Smashed Potato Baked Beans Tarts

These crispy little tarts are the ultimate post breakfast snack. Cheap, delicious and super simple to make - this recipe is the ultimate way to enjoy cheesy beans.

Ingredients

  • 12largeish new potatoes
  • 2 tbsp vegetable oil
  • 1 tinbaked beans
  • 3 or 4 slicesmild cheddar
  • a handfulchopped chives
  • a handfulfried bacon pieces

They are so simple to make. You smash the cooked potatoes into a well oiled muffin tin and roast them until crispy, fill with beans, top with cheese and off we go!

Method

  • Preheat the oven to 180°C,
  • Boil the potatoes in a large pan of salted water until they are fork soft.
  • Drizzle the vegetable oil into a 12 hole muffin tray and use something to crush them into the holes, giving you a fillable tart case shape.
  • Drizzle with a touch more oil and bake until they are crispy and hold their shape.
  • Fill them with beans and top with a little disk of cheddar, then bake them until the cheese has melted and the beans are bubbling.
  • Top with diced chives and bacon pieces and eat warm,
