Cuban Breakfast Sandwich

This is a cuban sandwich inspired breakfast muffin - basically a cubano, but with a fried egg!

Done in 30 minutes

Ingredients

    Mojo Mayo:
  • 3 tbspmayo
  • 1 tbspchives
  • 1 tbspcoriander, chopped
  • 1 tspground cumin
  • 1/2lime, juice
  • 1/2 tspdried oregano
  • Salt, to taste
  • Sandwich:
  • 2sausages, skins removed
  • 2pieces roasted ham
  • 2 slicesSwiss cheese
  • 4pickle slices
  • American mustard
  • English muffins
  • 1egg
  • Salt and pepper, to taste

We’ve got a herby mojo mayo, crispy pan fried ham, of course a fried egg, and two sausage patties finished with Swiss cheese, melted to perfection

Method

  • Start by mixing up all of the ingredients for the mayo. Set aside
  • Take the sausages out of their casings, and shape into patties. Season both sides with salt and pepper.
  • Fry the ham in a pan with a splash of oil until crispy on both sides. Set aside.
  • Cook the sausage patties in the same pan. Once flipped, top both patties with slices of cheese and let it melt.
  • Meanwhile, fry an egg and toast the muffin
  • Assemble the sandwich - toasted muffin, mayo, pickles, 2 x patties, ham, fried egg, and top muffin with American mustard. Enjoy!
