Crispy Lamb Loaded Doritos Chaat

Everyone has a bit of boldness inside of them, and Doritos can unleash it! This time, we're loading Doritos Hint of Paprika Dippers with Indian inspired chaat flavours, resulting in a delicious sharing platter!

Ingredients

The base:

1 packetDoritos Hint of Paprika Dippers

2tomatoes, diced

1red onion, diced

1large potato, diced and boiled

2 green chillies, sliced

Mango chutney:

3 tbspmango chutney

1/2 tspcumin

1/2 tspginger

Mint Chutney:

30gmixed green herbs (mint and coriander)

1green chilli

1/2 spring onion

1 tspginger and garlic paste

1 tbspmint sauce

1 tspcumin

1 tspchaat masala (optional)

salt and sugar, to taste

Crispy lamb:

500glamb mince

1 brown onion, sliced

1 tspcinnamon

1 tspfennel seeds

1 tspblack peppercorns

1 tspcumin

5g tomato paste

To serve:

Handful ofcoriander leaves

dusting of chaat masala (optional)

Handful of sev (crispy indian snack)

spoonful of pomegranate

4 tbsp yoghourt

4 tbsp Doritos Sour Cream and Chive Dip

We're making loaded Doritos, all inspired by the Indian flavours of Chaat. Using Doritos Hint of Paprika dippers as our base, we're loading them with fresh and cooked veggies, 3 chutneys, enhanced by our Doritos dips, and crispy spiced lamb. This one is so bold, you'll have to share it!

Method

This one is all about the assembly, so we’re going to start with the chutneys!

Firstly, grab your mango chutney out of the cupboard, and mix in some boiled water and give it a mix to loosen it up, adding our extra spices. For the mint chutney, blend together all the ingredients until smooth and set aside for later.

Mix together yoghourt and Doritos Sour Cream and Chive Dip for a super easy seasoned yoghourt chutney.

For our toppings, peel and dice up the potato, and boil in seasoned water with salt, chicken stock cube and turmeric. for about 15 minutes, or until soft.

Prepare the rest of the toppings; dicing tomatoes and red onion, and slicing green chilli.

For the lamb, start by lightly frying off our spices and pastes, before adding in the lamb to brown slightly. Add in our sliced onions and continue to fry until the onions are soft and caramelised, and the lamb is crispy.

Now it’s time to plate up! Add a packet of Doritos Hint of Paprika to a platter, and start layering on our tomatoes, onion, chilli and potatoes. Sprinkle on finely chopped coriander, and generously sprinkle on the lamb.

To finish, drizzle on the chutneys, and sprinkle on some sev, chaat masala and pomegranate. All that's left is to dig in!
