Boxing Day Turkey Curry with Doritos

We're in the middle of winter, and the only thing on our mind this Boxing Day is a comforting, warm, spicy curry, using our Christmas leftovers!

Ingredients

    Curry base:
  • 2brown onions
  • 3 tspginger and garlic paste
  • 1 green chilli, finely diced
  • 2 tbsptomato paste
  • 3 tbspDoritos mild salsa
  • handful of leftover carrots and parsnips, roughly chopped
  • 1 tspchilli powder
  • 1 tspsweet paprika
  • 1 tspcumin
  • 1/2 tspturmeric
  • 1 tspgaram masala
  • 100mlchicken stock
  • 50mldouble cream
  • handful of leftover turkey
  • Raita:
  • 2 tbspDoritos Sour Cream and Chive Dip
  • 1 tbspyogurt
  • 2 tspmilk
  • 1/4 cucumber, grated
  • Handful of coriander, finely chopped
  • 1 tspcumin seeds
  • 1 tspfennel seeds
  • salt and pepper, to taste
  • To serve:
  • handful of leftover brussels sprouts, finely chopped
  • 1 red onion, finely sliced
  • nigella seeds
  • fresh coriander leaves

Not sure what to do with your Christmas leftovers? We only have one dish in mind, and that's a butter chicken inspired curry, using Christmas root veggies for the base, and leftover turkey for the protein, and of course, the only way to serve this is on top of Doritos Cool Original Chips!

Method

  • Cook our base veg for the curry down in ghee, with a little bit of salt, adding each ingredient once the other has cooked - onions first, till translucent, then ginger and garlic, green chilli and leftover root veggies.
  • In the cooked off base, add in the spice mix. Cook off well until the oil splits from the tomato paste.
  • Add stock to the curry base, and cook for 10 minutes. After this, blitz and place back into the pan, adding cream and mixing well. 
  • At this stage, we can heat the leftover turkey in the curry, whilst getting our garnishes ready - crispy chopped brussels - finely chop the brussels sprouts and shallow fry until crispy. Organise fresh coriander leaves, nigella seeds and a Doritos Sour Cream and Chive Raita - Add the ingredients for our raita in a bowl, mix and season to taste.
  • Plate up your Doritos Cool Original chips, cover with our turkey curry, and garnish with our crispy fried brussels, our Doritos raita, followed by the red onion, nigella seeds and coriander leaves.
