Air Fried Pesto Stuffed Burrata

Everyone loves burrata, but this one is extra special.

Ingredients

    Pesto:
  • 30gpine nuts, toasted
  • 50gfresh basil
  • 2garlic cloves
  • 1 tbsplemon juice
  • 2 tbspolive oil
  • 30gparmesan
  • Salt
  • Everything else:
  • 2burrata
  • 50gplain flour, seasoned
  • 50gpanko
  • 2eggs, beaten
  • Marinara, to serve

Stuffed full of homemade pesto, this burrata is breaded and air fried until crispy. Served on top of marinara, it's the ultimate easy dish.

Method

  • Blend together all of the ingredients for the pesto until smooth. Taste for seasoning and adjust if necessary
  • Fill up a plastic syringe with the pesto. Inject the burrata, then pop into the freezer for 30 minutes.
  • Coat the burrata in seasoned flour, then egg, then Panko. Spray with oil.
  • Pop into the air fryer for 10 minutes or until lightly golden.
  • Serve on top of marinara with extra olive oil.
