Banoffee Sheet Tart

Quicker than a banoffee pie, but just as delicious.

Ingredients

  • Puff Pastry Sheet
  • 40gMacadamia Nuts
  • 3 to 4Bananas
  • 20gButter
  • 300mlDouble Cream
  • 2 to 3 TbspCoffee Syrup
  • Golden Sugar
  • Milk or Dark Chocolate
  • Salted Caramel Sauce

A puff pastry sheet baked with golden sugar and Macadamia nuts, topped with caramelised bananas, coffee cream, toasted coconut and drizzled salted caramel.

Method

  • Preheat the oven to 200ÂșC. Unroll the pastry sheet and poke with a fork across the surface. Sprinkle over Golden Sugar and Crushed Macadamia Nuts then bake for 20 mins.
  • Peel the bananas and chop in half lengthways, then caramelise for 6 to 8 mins in a pan with butter and golden sugar.
  • Whip the cold double cream with the coffee syrup to soft peaks, you can also use instant coffee in a pinch.
  • Spread over the cream on the cooled pastry, top with the bananas.
  • Drizzle over caramel sauce, then finish with toasted desiccated coconut and shavings of chocolate.
  • Serve right away.
