  • 225gunsalted butter, room temperature
  • 60mldouble cream
  • 500gicing sugar
  • 2 tspvanilla extract or paste
  • Small pinch salt

Method

  • Using a stand mixer or by hand, beat the butter until soft and fluffy.
  • Add the cream, salt, vanilla, and 100g of the icing sugar. Beat on a low speed, and gradually add the rest of the icing sugar bit by bit.
  • Increase the speed to medium/high, and continue to beat until it's smooth and fluffy. Add more sugar or cream if it's too thin or thick - depends on your preference!
  • Use however you like - I'd recommend with a rich chocolate cake! Enjoy!
