BLT Salad

Is there anything better than the nation's favourite sandwich, a classic BLT?

Ingredients

  • 300gstreaky bacon
  • 2 large pieces focaccia, cut into cubes
  • around 6 largetomatoes
  • 1 tspflaked sea salt
  • 1 tspcaster sugar
  • 150gmayonnaise
  • 1 wholeromaine lettuce
  • 1 handfulchives, to serve

Well yeah, actually there is. It's this! The BLT salad! Taking the three components you know and love from the classic and remixing them into a delicious refreshing lunch or dinner. Crispy bacon, focaccia croutons and refreshing lettuce.

Method

  • First off, cut the streaky bacon into roughly 4cm wide strips.
  • Place the bacon in a heavy bottomed frying pan and turn the heat on low. Keep stirring the bacon and it'll begin to render its fat.
  • Keep doing this, gradually increasing the heat, until the bacon is crisp with plenty of bacon dripping in the pan. Remove the bacon with a slotted spoon.
  • Add the focaccia chunks to the hot pan and fry until golden on each side.
  • Cut the tomatoes into chunks, then place in a bowl and season with sugar and salt. Allow to sit for around 20 minutes then remove, leaving their tomato juices in the pan.
  • Whisk in the mayonnaise, then toss everything together in the bowl.
  • Serve on a wide platter.
