Cherry and Chocolate Cornflake Crunch

Cherry, chocolate and cornflake brittle?

Ingredients

  • 150gCornflakes
  • 120gSalted Butter
  • 100gBrown Sugar
  • 200gMilk Chocolate
  • 100gDouble Cream
  • Cherry Curd
  • Sliced Almonds (Optional)

Smooth and creamy milk chocolate ganache filled with a sweet cherry curd sandwiched between two layers of crunchy cornflake brittle. The perfect afternoon treat for two!

Method

  • In a large bowl pour in 3 cups of cornflakes and place to one side.
  • In a pan on medium heat combine butter and brown sugar until thickened then pour over the cornflakes. Mix thoroughly until coated.
  • Using a greased circle cutter, spoon in your mixture to create disks of Cornflake brittle. Press down firmly to compact to help it hold its own shape when cooled.
  • Optional step - Place sliced almonds on top and place under the grill for 1 min or 2 to caramelise the top, some spread can occur here so reuse the circle cutter to reshape while warm, then leave to cool.
  • To make the ganache heat the cream until simmering, then in a bowl pour the cream over milk chocolate. Cover the top with cling film and leave to the side for a few mins to melt. Then stir to combine and leave to cool fully for a pipeable texture.
  • Pipe a ring of ganache around your cornflake disk, then fill with a tablespoon of cherry curd.
  • Place a second cornflake disk on top.
