Chocolate Malted Milk Tray Bake

Ingredients

  • 225mlSunflower Oil
  • 250gCaster Sugar
  • 3Eggs
  • 200mlMilk
  • 250gSelf Raising Flour
  • 4 TbspMalted Milk Powder
  • 1 1/2 TspBicarbonate of Soda
  • Maltesers
  • Malted Milk Biscuits
  • Buttercream:
  • 100gButter
  • 200gIcing Sugar
  • 100gMilk Chocolate
  • 1 TspVanilla Extract

Malted milk biscuits are the goat. Especially the chocolate ones! So we've baked them into a malted milk sponge and topped it with maltesers and even more biscuits.

Method

  • Heat the oven to 180C/160C fan/gas 4.
  • Oil a 20 x 30cm traybake tin and line with baking parchment.
  • Line the bottom of your tray with malted milk biscuits.
  • Whisk the oil, sugar, eggs and milk together in a large bowl. Sieve over the flour, malted milk powder and bicarbonate of soda, then fold the dry ingredients into the wet until well-combined.
  • Pour the batter into the prepared tin and bake for 30-35 mins. Set the tin on a wire rack and leave to cool completely.
  • While the sponge cools, make buttercream. Beat the butter, icing sugar, melted chocolate and vanilla.
  • Pipe the buttercream over the cooled cake. Scatter over the bashed maltesers and broken malted milk biscuits.
