Baileys Summertime Strawberries & Cream Eton Mess Cocktail Recipe

    Coulis drizzle:
  • 125graspberries

  • 2scoops crushed ice
  • 150mlBaileys Strawberries & Cream
  • 2 tbspmini marshmallows
  • 75mlraspberry coulis
  • Mini meringues, to serve
  • Mint, to serve

Made with marshmallows, coulis, fresh fruit and Bailey’s signature Strawberries & Cream liqueur, Twisted's Baileys Summertime Strawberries & Cream Eton Mess Cocktail recipe is all you need to prepare for spending the next few months soaking up the sunshine.

Method

  • Add raspberries, sugar and water to a saucepan and bring to boil for 5 -10 minutes until the syrup starts to thicken.
  • Strain out the seeds and place a few spoons into a piping bag, keeping at least 75ml for the cocktails.
  • Drizzle the coulis onto glasses - you can chill the glass here to keep them looking neat while you make the cocktail!
  • Add all the ingredients to a blender and blend until well mixed and slushy, adding more ice if needed.
  • Pour into the coulis drizzled glasses and garnish with mini meringues, marshmallows, strawberries and mint.
