Impossible Coconut Custard Pie with Lemon Cream

How does this even work??

Ingredients

For the Pie:

4Eggs

65gPlain Flour

500gCoconut Milk

2 tspVanilla Extract

125gSalted Butter

75gDesiccated Coconut

200gSugar

Lemon Whipped Cream:

100gDouble Cream

2 TbspSugar

1 TbspLemon Zest

2 TspLemon Juice

It goes into the dish a liquid but then bakes into a 3 layer pie?? What is this magic?! Something happens when you put this into the oven - out comes a creamy coconut custard pie that's formed its own crust! Sometimes you have to just trust the process.

Method

Grease the pie dish and pre-heat oven to moderate (180 degrees celsius, fan-forced).

Mix all ingredients together until combined.

Pour into pie dish and bake for 45 minutes.

Take your whipping cream and start whipping it in your mixer. Add in the sugar, zest and lastly the lemon juice.

Whip until it forms soft peaks. Refrigerate and pipe before serving.

Serve hot or cold.
