We're taking everything we love from fajita dinners... that's nacho cheese, peppers, beans and corn, all served on top of a deep fried pizza! And made even bolder with the help of Doritos Cool Original!
Of course you can use shop bought, but if you want to make your own pizza dough, start by adding all the wet ingredients into your mixing bowl/stand mixer, with the yeast and mix until dissolved. Add the flour then salt, and knead for 12-15 minutes until smooth, glossy and very elastic. Allow to rest for at least an hour to double in size, before portioning out into 160g balls. Leave to rest for another hour whilst preparing the toppings!
Add our peppers, onions and garlic to a frying pan, with a tsp of oil, and our fajita spices, and cook off until soft, and fragrant.
For our beans, add a tsp of oil to a small saucepan, with our spices, and a tbsp of water, and cook down till thick.
Once that's all done, get all our dredge ingredients on separate plates, and grab one of our pizza balls, flatten into a very small pizza, then cover in our flour, then eggs, then our crushed up Doritos Cool Original crumb.
Very carefully place our Doritos crusted pizza into a fryer at 170°c, flipping halfway through, until golden. About 3 minutes per side.
Start building the pizza with a good layer of Doritos Nacho Cheese, then a generous amount of our fajita peppers, then our cubes of fresh tomato and the sweetcorn. Add our avocado, then pickled onions, then feta, black beans, fresh coriander and finally more Doritos crumbs.
