Easter Mini-Egg Rocky Road

One cheeky snack a day keeps the sadness away, or that's at least what we think!

Ingredients

    Ingredients:
  • 400gmilk chocolate
  • 125gunsalted butter
  • 100gPeeps marshmallows
  • 200gBiscoff
  • 200gmini eggs

Indulgent soft chocolate, with a touch of salt, and mixed with crushed Lotus Biscoff, mini-eggs, and Peeps, because they're so cute!

Method

  • Start my melting your chocolate and butter, over a pot of boiling water, or in 30 second increments in a microwave. Do this till everything is melted, and mix to combine.
  • Into the already tempting melted chocolate, add in the crushed Biscoff biscuits, your crushed mini-eggs, and your chopped up peeps.
  • Mix well, and transfer to a 9-inch, lined dish, or baking tray, and let chill in the fridge for a minimum of 45 mins. But you want this to be hard enough to stay together, but still soft to eat!
  • And that's, it, cut into 9 pieces, and enjoy!
