Everything Feta Parcels

These feta parcels are a super simple way of using filo pastry - just whack it all in, brush some butter over it and bake until crispy.

Ingredients

    What you'll need:
  • 1 filo pastry
  • 150gbutter
  • 3 onions, caramelised
  • 3 blocks feta
  • 3 tbspeverything seasoning
  • 3 tbsphoney

Everything bagel seasoning coats these crispy feta filled parcels – a fusion of Greek and American flavours. These are also stuffed with caramelised onion for a hint of sweetness to offset the saltiness. Bosh.

Method

  • Carefully bring the filo to room temperature and unroll the package. Place a damp tea towel over the top to keep them from drying out - this happens very fast, so watch out!
  • Brush them with butter and top with another filo sheet. Repeat three times.
  • Place the feta in the middle and top with caramelised onions, then fold up the sides to make a tight little filo package.
  • Bake for around 30 mins.
  • Drizzle with honey and scatter with the everything seasoning.
  • Eat at once!
