Gyros Taquitos

Crispy tortillas filled with Greek marinated chicken thighs and cheese, served with tzatziki and a fresh tomato salad.

    Taquitos
  • 600gchicken thighs
  • 1lemon, juice
  • 1/2 tspsmoked paprika
  • 2garlic cloves, grated
  • 1/2 tspdried oregano
  • 1 tbsphoney
  • 2 tbspGreek yoghurt
  • Salt, to taste
  • Low moisture mozzarella, grated
  • Vegetable oil
  • Tzatziki
  • 100gGreek yoghurt
  • 1/2cucumber, finely grated
  • 1garlic clove, grated
  • 1 tbspdill, chopped
  • 1lemon, juice
  • Salt, to taste
  • Tomato salsa
  • 3 largevine tomatoes, diced
  • 50gfeta, crumbled
  • 1/2red onion, finely diced
  • 1lemon, juice
  • 2pickled chillies, sliced
  • 1/2 tspdried oregano
  • Pinchchilli flakes
  • Salt and pepper, to taste
  • Olive oil, to taste

Taquitos, also known as flautas, are a Mexican dish of tortillas rolled up with filling and fried, often beef or chicken and cheese. This recipe takes the foundation of this dish, but uses Greek flavours.

Method

  • Mix up the chicken marinade, and add the chicken thighs. Toss through, and let marinate for at least an hour.
  • Preheat the oven grill. Pop the chicken thighs under the grill for around 15 minutes or until lightly charred and cooked through. Shred up with two forks.
  • Roll up with shredded cheese. Secure with toothpicks.
  • For the tzatziki, mix up all the ingredients in a bowl. Set aside. Combine all the ingredients for the salad, and season to taste. Set aside.
  • Shallow fry in vegetable oil until golden on both sides and the cheese has melted.
  • Plate up with the tzatziki and tomato salsa, and dig in!
