Hot Honey Ranch Club Sandwich Salad

It's everything you expect from a club sandwich... in salad form (and the dressing is pretty special, too).

Ingredients

    Hot honey ranch:
  • 4 tbspsour cream
  • 3 tbsphot honey
  • 2 tbspchilli crisp
  • 1 tbspranch seasoning (all purpose seasoning works well too)
  • 2 tbspfresh chopped dill
  • 1/2 tbsp chilli flakes
  • Club sandwich salad:
  • 1 romaine lettuce, chopped
  • 2 vine tomatoes, quartered
  • 5bacon rashes, diced
  • 1avocado
  • 2 chicken breasts
  • 2 slices bread
  • 50gparmesan shavings

If you class yourself as one of the not so salad-y people out there, then this one's definitely for you! Expect all the fillings from a club sandwich dressed in a hot honey spiked ranch dressing and tossed together in a salad bowl. You could call it a salad; you could call it a deconstructed sarnie – either way, it's a banger.

Method

  • To make the ranch dressing, add all the ingredients into a bowl, or jar, and mix. You can adjust here the spice and sweetness. This can stay in your fridge for three days!
  • For the salad, start with roasting chicken breasts with salt, pepper and oil, and frying the diced bacon until crispy. Allow both to cool before mixing with the fresh veggies. Serve with shavings of parmesan.
