Ingredients

    For the Cake:
  • 175gSalted Butter
  • 175gCaster Sugar
  • 275gPlain Flour
  • 1 TspBaking Powder
  • 4Large Eggs
  • Grated Zest Of 1 Lemon
  • 1 TspVanilla Extract
  • For the Filling:
  • 250gSalted Butter
  • 500gIcing Sugar
  • 1 or 2 TspOrange Extract
  • Marmalade

Here's a simple Madeira cake recipe that will keep the bear in your life super happy. Paired with a marmalade and a light simple orange buttercream - the perfect afternoon treat.

Method

  • Preheat your oven to 160°C, then line a 2lb loaf tin with baking paper.
  • Beat the butter and sugar until light and fluffy.
  • Crack the eggs into the mixture one at a time, mixing till just incorporated before adding the next.
  • Mix together the flour and baking powder, along with the lemon zest.
  • Mix your flour mixture into your butter/sugar.
  • Then stir through 1 tsp of Vanilla Extract.
  • Bake for 50 mins or until cooked thoroughly.
  • Prepare your buttercream by whipping your butter until light and fluffy, and the slowly add in your icing sugar.
  • Add Orange Extract to taste.
  • Slice your Madeira Loaf into slices, add your fillings and enjoy!
