Here's a simple Madeira cake recipe that will keep the bear in your life super happy. Paired with a marmalade and a light simple orange buttercream - the perfect afternoon treat.
Method
Preheat your oven to 160°C, then line a 2lb loaf tin with baking paper.
Beat the butter and sugar until light and fluffy.
Crack the eggs into the mixture one at a time, mixing till just incorporated before adding the next.
Mix together the flour and baking powder, along with the lemon zest.
Mix your flour mixture into your butter/sugar.
Then stir through 1 tsp of Vanilla Extract.
Bake for 50 mins or until cooked thoroughly.
Prepare your buttercream by whipping your butter until light and fluffy, and the slowly add in your icing sugar.
Add Orange Extract to taste.
Slice your Madeira Loaf into slices, add your fillings and enjoy!
