Ingredients

  • 500g mashed potatoes
  • 100gcornflour
  • 1 egg
  • 2 tbsp chives
  • 50gparmesan, grated
  • 1 tspflaked sea salt
  • 1 tsp freshly ground black pepper

That's what we did here in this deeply excellent 10/10 recipe. It's mash, but as you've never seen it before - reborn as fries! Literally the best thing to do with your mashed potatoes ever.

Method

  • Mix all the ingredients in a bowl until you have a smooth dough that doesn't crumble too easily.
  • Roll it out to a flat rectangle and cut into fat sticks.
  • Heat your fryer to 180°C and fry the sticks, a batch at a time, until crisp and crunchy.
  • Sprinkle with more parmesan and serve with dips.
  • What do you think of the recipe?
