Party Ring Cheesecake

Everyone loves a Party Ring!

Ingredients

  • 300gParty Rings
  • 150gMelted Butter
  • 750gCream Cheese
  • 300mlHeavy Whipping Cream
  • 100gIcing Sugar
  • 1 TspVanilla Extract
  • Royal Icing
  • Pink Food Colouring

The absolute nostalgic crowd pleaser - Party Ring biscuit base with creamy cheesecake filling topped with an authentic royal icing marble.

Method

  • Crush up the Party Rings and mix together with the melted butter.
  • Fill your tin with the biscuit mixture and press down to create your cheesecake case. Chill.
  • In a bowl whip together the cream cheese, heavy whipping cream, icing sugar and vanilla extract. Take care not to over whip, stop when you achieve firm but smooth peaks.
  • Spoon the cream mix into your tin and smooth. Place your cheesecake in the fridge while you prepare the icing sugar.
  • Pour a thin layer of pink icing sugar over the top of your cheesecake, followed by 3 white lines. Using a toothpick or the end of a knife, drag through to create the pattern of a party ring.
  • Place back in the fridge and leave overnight for best results.
