Pici Lentil Pasta

This 2 ingredient pici lentil pasta is the perfect plant based dish – it’s easy, flavourful, and packed with protein.

Ingredients

    for the pasta
  • 300g00 flour
  • 150mlwarm water
  • 3 tbspolive oil
  • for the sauce
  • 1 packBen's spicy lentil stew
  • 1 tbspolive oil
  • 1white onion, diced
  • 1red pepper, diced
  • 400gchopped tomatoes
  • 1 tspsalt and pepper
  • 1 tbspbalsamic vinegar
  • 1 handfulbasil leaves

It only takes 2 ingredients to make this pici pasta, and with the Ben's spicy lentil stew sauce - this is a super quick, easy, plant based dish.

Method

  • Add your flour into a large bowl or a clean surface and make a well in the centre. Add the warm water and oil into the well and incorporate into the flour using a fork until a rough dough forms.
  • Once a dough forms, knead the dough for 10 mins until it's smooth and elastic. Wrap the dough in cling film and allow to rest for 30 mins.
  • Roll the dough into a 1cm thick round and cut into strips. One at a time, roll out each strip until it resembles spaghetti. Place each piece of pici on a tray dusted with flour to stop them sticking.
  • Time to make the sauce, in a medium saucepan, add olive oil, followed by your diced onion and pepper, sauté until softened - 3-4 mins.
  • Then add your Ben’s spicy lentil stew pack, chopped tomatoes, salt and pepper and balsamic vinegar. Allow to simmer and reduce for 10 mins.
  • While the sauce reduces, boil water for your pasta. Season with salt and drop the pici in and cook for 2-3 mins then transfer to your sauce. Toss together and add in your basil leaves. Before serving, finish with vegan parmesan cheese.
