Salmon Bagel Bites

Everything bagel bites topped with spicy salmon, pickled red onion, and crispy capers – YUM!

Ingredients

    for the salmon
  • 200gsushi grade salmon, diced
  • 3 tbspJapanese mayo
  • 1 tbspsriracha
  • 1lemon, zest and juice
  • Salt and pepper
  • for the bagel bites
  • 1bagel, sliced
  • 2 tbspolive oil
  • 1 tbspeverything bagel seasoning
  • to serve
  • 1/2red onion, finely diced and lightly pickled
  • 2 tbspcapers
  • 100mlolive oil
  • Fresh dill

We all know and love bagels so why not make them into a delicious nibble for your loved ones! Perfect with a Brewgooder x Twisted IPA.

Method

  • Slice your bagels into little bagel chips. Toss in olive oil and everything bagel seasoning, then pop into a 180 C oven for 15 minutes or until they're golden and crispy
  • Dice your salmon, then add mayo, lemon juice and zest, sriracha (or your favourite hot sauce), salt, and pepper. Mix well, then set aside
  • Lightly pickle your red onion with vinegar, salt, and sugar
  • Pat dry your capers after removing them from the brine. Add your oil to a small pan over a high heat, then add your capers and fry until crispy.
  • Build your bagel bites, starting with a good helping of the salmon mix. Top with pickled onion, crispy capers, and some fresh dill. Enjoy!
