The easiest tiramisu cupcakes you'll ever make, perfect when you need that little sweet treat that's also a much needed caffeine hit!
Method
Preheat the oven to 160ÂșC (fan)
Beat the butter, caster sugar and vanilla together. Add the eggs and flour and baking powder; beat well.
Divide the mixture between the cases and bake for around 16 mins, or until risen and firm. Transfer to a wire rack to cool.
Meanwhile, make a coffee syrup. Put the coffee and granulated sugar in a pan with just-boiled water. Stir, over a gentle heat, until the sugar has dissolved. Set aside to cool.
Poke holes in the middle of each cake and pour over a little coffee syrup.
Combine the mascarpone with the icing sugar. In a separate bowl, whisk the cream until thickened. Spread the mixture over the cakes and chill for 30 minutes to firm up. To serve, dust with cocoa powder.
