Smashed Gnocchi Caesar Salad

Usually, nobody cares about croutons. They are boring compared to the more exciting stuff in a Caesar salad.

Ingredients

    For the gnocchi:
  • 1 packshop bought gnocchi
  • 3 tbspolive oil
  • 3 tbspgrated parmesan
  • For the dressing:
  • 100mlmayonnaise
  • 2finely diced anchovies
  • 2 tbspparmesan, plus more to serve
  • 1 tspwhite wine vinegar
  • 1 garlic clove
  • For the salad:
  • 3sliced chicken breasts
  • 2hearts of romaine lettuce
  • 2 tbspchives
  • to tasteparmesan shavings

NOT ANY MORE MY FRIEND. Now they are the best bit - an army of squishy, crunchy, cheesy little gnocchi nuggets are joining the Caesar party. It's the best salad recipe ever! It's still probably in an alternate universe healthy!

Method

  • Preheat the oven to 180°C.
  • Smash the gnocchi on a tray, drizzle with olive oil and sprinkle with parmesan.
  • In a separate dish, whisk together the ingredients for the Caesar dressing.
  • Toss the crunchy cheesy gnocchi, salad leaves and other bits together. Serve with more parm. Destroy!
