Smashed Yorkshire Pudding

Ingredients

  • 100 gplain flour
  • 3 eggs
  • 230 mlwhole milk
  • a pinch flaked sea salt
  • 2 tbspsunflower oil
  • 1 egg, beaten
  • 200 gchicken mince

What can we smash next? We thought about all sorts of things - peas, crackers, armchairs. But we settled on the yorkshire pudding, and we're so glad we did.

Method

  • Preheat the oven to 180°C. Whisk the eggs with the flour to form a smooth slurry, then slowly pour in the milk and add the salt. Set aside for around an hour - this makes the yorkie better for some reason.
  • Get a round cake tin and pour the oil in and place it in the oven to preheat.
  • Pour in roughly half the batter and place it immediately in the oven. It'll puff up. Cook until nicely browned then remove.
  • Allow it to cool down - don't worry too much if it collapses a little - then brush the flattest side with the egg, the press the chicken mince into it.
  • Pan fry until delicious and cooked through, then use as a vehicle for scooping up your favourite roast dinner bits.
