Air Fried Pesto Stuffed Burrata

Everyone loves burrata, but this one is extra special.

Done in 30 minutes

Serves 4

Ingredients

Pesto:

30gpine nuts, toasted

50gfresh basil

2garlic cloves

1 tbsplemon juice

2 tbspolive oil

30gparmesan

Salt

Everything else:

2burrata

50gplain flour, seasoned

50gpanko

2eggs, beaten

Marinara, to serve

Stuffed full of homemade pesto, this burrata is breaded and air fried until crispy. Served on top of marinara, it's the ultimate easy dish.

Method

Blend together all of the ingredients for the pesto until smooth. Taste for seasoning and adjust if necessary

Fill up a plastic syringe with the pesto. Inject the burrata, then pop into the freezer for 30 minutes.

Coat the burrata in seasoned flour, then egg, then Panko. Spray with oil.

Pop into the air fryer for 10 minutes or until lightly golden.

Serve on top of marinara with extra olive oil.
