Strawberries and Cream Waffle Cake

This is probably the most easiest dessert you'll ever make.

  • 12Waffles
  • 1200gStrawberries
  • 600gDouble Cream
  • 400gMascarpone
  • 200gCream Cheese
  • 100gIcing Sugar (Optional)

Whether you're looking for a last minute dessert or something super easy this is the one. Layers of egg waffles, fresh strawberries and heaps of freshly whipped cream.

Method

  • Line a tall sided baking tin with baking paper and place a layer of waffles.
  • Slice strawberries in half and line the edges of the tin.
  • In a bowl whip together double cream, mascarpone, cream cheese and icing sugar until firm but smooth peaks are formed.
  • Pipe the cream mixture in between the strawberries first to seal the sides, then pipe a layer to cover the waffles.
  • Chop up the rest of your strawberries (saving 2 or 3 for decoration) and fill the center of your dessert.
  • Cover with the rest of your cream and smooth the top.
  • Finally finish with another layer of more waffles then refrigerate for a couple of hours until firm.
  • Turn upside down and remove the tray, then peel off the baking paper.
  • Decorate the top how you see fit, we've opted for a sprinkle of icing sugar, piped cream and strawberries.
