Whether you're looking for a last minute dessert or something super easy this is the one. Layers of egg waffles, fresh strawberries and heaps of freshly whipped cream.
Line a tall sided baking tin with baking paper and place a layer of waffles.
Slice strawberries in half and line the edges of the tin.
In a bowl whip together double cream, mascarpone, cream cheese and icing sugar until firm but smooth peaks are formed.
Pipe the cream mixture in between the strawberries first to seal the sides, then pipe a layer to cover the waffles.
Chop up the rest of your strawberries (saving 2 or 3 for decoration) and fill the center of your dessert.
Cover with the rest of your cream and smooth the top.
Finally finish with another layer of more waffles then refrigerate for a couple of hours until firm.
Turn upside down and remove the tray, then peel off the baking paper.
Decorate the top how you see fit, we've opted for a sprinkle of icing sugar, piped cream and strawberries.
