Turkish Gnocchi with Red Pepper Butter

Just like Turkish eggs but made with gnocchi for a quick yet flavourful 10 min meal.

Ingredients

    The gnocchi:
  • 50gvegan butter
  • 2 tspextra virgin olive oil
  • 2garlic cloves, thinly sliced
  • 2 tsppul biber (red pepper flakes)
  • 1/2 tspchilli flakes
  • 1/4 tsp ground cumin
  • 1/4 tspground coriander
  • 500ggnocchi
  • The yoghurt
  • 200gvegan greek yoghurt
  • 1 small garlic clove, grated
  • to tastelemon juice
  • to tastesalt and freshly cracked pepper
  • To serve
  • 50gvegan feta, crumbled
  • to garnishsprigs of dill

This pasta is my new go-to; inspired by Turkish eggs the gnocchi sits on bed of creamy yoghurt loaded and gets lovingly and generously topped with drizzles of red pepper butter. It's indulgent but light and an excellent way to turn a classic breakfast into a vegan main.

Method

  • Combine the yoghurt with the seasonings. Add lemon, salt and pepper to taste then set to one side.
  • Heat a large frying pan over a medium heat. Add the butter and oil. Once hot add the garlic and fry until fragrant and slightly softened.
  • Add the spices and bloom in the butter for a minute or so.
  • Meanwhile cook some gnocchi in salted, boiling water until it floats then lift straight out and place into the sauce with a generous amount of pasta water to help the sauce emulsify.
  • Spoon the yoghurt onto a plate then top with the gnocchi, some dill and vegan feta. Serve with a drizzle of the buttery sauce.
