Marinated Tofu Feta

Super fresh, flavourful tofu that's versatile and great to use in place of feta or halloumi.

Ingredients

    For the tofu
  • 2 tbsp nutritional yeast
  • 1 tbspwhite miso
  • 2 tbspapple cider vinegar
  • 2-3garlic cloves, grated
  • 1/2 lemon, zest and juice
  • 3 tbspolive oil
  • 1 tspdried dill
  • 1/2 tspchilli flakes
  • to tastesalt and freshly cracked black pepper
  • 400gextra firm tofu, drained and cut/broken into bitesize pieces or smaller

This is one of the most flavourful ways to have tofu. It makes raw tofu taste ridiculously good, and when grilled can be used in place of halloumi. Use the marinated tofu in our pasta salad, courgette fritters and za'atar wrap with tomatoes, cucumber and pickled cabbage.

Method

  • Combine all the ingredients for the marinade in a large mixing bowl.
  • Add the broken pieces of tofu into the marinade. Mix well to ensure every piece is coated properly.
  • Cover and leave to marinade for between 10 minutes and 24 hours.
