White Chocolate Dream Cake

Ingredients

  • 12 Vanilla Fairy Cakes
  • 50mlMilk
  • 50gWhite Chocolate Chips
  • 400gDouble Cream
  • 100gIcing Sugar
  • 1 TbspCornflour
  • 1 Tsp Vanilla Extract
  • 400g White Chocolate

We've taken the viral dream cake and hit it with a slap of nostalgia. This white chocolate version is a nod to the gone too soon Cadbury's Dream Bar - Layers of white chocolate ganache, soft cream and vanilla cake - and that all to important chocolate top layer ready to smash with a spoon!

Method

  • In your tin, crumble 12 fairy cakes. Add in White Chocolate Chips and pour over milk. Mix together and then press to the bottom lighty.
  • In a bowl add in 300g of white chocolate and pour over 100ml of heated cream, cover and leave to one side for a few minutes then mix till combined.
  • For the cream layer, stir in the remaining 300ml of the double cream into icing sugar and cornflour. Add vanilla extract and whip with a hand mixer until firm peaks are formed.
  • Add the cream mixture to your tin and smooth, place in the fridge until you are ready for the next step.
  • When the white chocolate ganache is cool enough, add it as the next layer and smooth.
  • For the topping, melt 100g of white chocolate slowly using a microwave. 10 to 15 seconds at a time until just melted. Allow to cool slightly to room temp and pour over your cake. The place in a fridge to set.
  • Dust with icing sugar and enjoy.
