Pulled Pork 3 Ways: Honey Chipotle Tacos

Sweet and spicy caramelised pulled pork topped with a charred spring onion salsa and radishes - delicious!

Ingredients

    Tacos
  • Radishes, sliced
  • Corn tortillas
  • 2 tbspchipotle paste
  • 1 tbsphoney
  • Lime
  • Pulled pork
  • Salsa
  • 4spring onions
  • 1jalapeno, finely chopped
  • 1garlic clove, minced
  • 30gcoriander, finely chopped
  • 1lime, juice
  • Drizzleolive oil
  • Salt, to taste

You can find the base recipe for the pulled pork here. If you're not using it 3 ways, then add ground cumin, ground coriander, and chipotle to the pork braise!

Method

  • Preheat the oven grill to 250 C. Char the spring onions over an open flame, under the grill, or in a pan. Chop up, and mix with coriander, jalapeño, garlic, lime, olive oil, and salt.
  • Mix some of the pulled pork with chipotle paste, honey, and lime.
  • Pop under the grill for a few minutes until slightly charred and caramelised
  • Load the pork onto tortillas and top with salsa, radish slices, and extra lime wedges. Enjoy!
