Fried Chicken Caesar Sandwich

The best thing to be invented since, well, fried chicken. And caesar salad.

Ingredients

  • 4chicken thighs, boneless and skinless
  • 200mlbutter milk
  • 2 tbsphot sauce
  • 1 tbspflaked sea salt
  • 200gplain flour
  • 50g corn flour
  • 1 tbspfine sea salt
  • 2 litresfrying oil
  • 100mlmayonnaise
  • 4crushed anchovies
  • 30ggrated parmesan, and more to finish
  • 1 clovecrushed garlic
  • 1 tspwhite wine vinegar
  • 1cos lettuce
  • 4ciabatta buns

This is a very simple twist, but don't let that fool you: it's one of the most delicious things we've tried for a long time. Something about crunchy, juicy and flavourful fried chicken meeting creamy, parmesan rich caesar sauce is absolute food heaven.

Method

  • Add the chicken thighs to the buttermilk, along with the hot sauce and salt. Leave to do its thing for at least an hour.
  • Whisk the flours together along with the sea salt and preheat the oil to 160°C. Take the marinade and splash it over the flour to create little pockets and subsequent craggly bits.
  • Dip the chicken in the flour and fry until golden, crisp and cooked through - roughly 8 minutes.
  • Whisk the mayonnaise and other sauce ingredients together, then divide the lettuce into leaves and toss it together, reserving some sauce for drizzling.
  • Toast the buns and built the burger - caesar sauce, chicken and lettuce. Finish with more parmesan sprinkles.
