Tequila Sunrise Trifle

Serves Makes one large trifle or several individual mini trifles.

Ingredients

  • 250gMadeira Cake
  • 460gPineapple Rings in Juice
  • 2Oranges
  • 135gRaspberry Jelly
  • 135gOrange Jelly
  • 1 TbspCustard Powder
  • 1 Tbsp Sugar
  • 1 SachetDouble Cream or Dream Topping
  • Cherries (To garnish)
  • Tequila
  • Grenadine
  • Triple Sec

A classic traditional trifle with a tropical twist, inspired by one the best summertime cocktails - The Tequila Sunrise. Pineapples and oranges, layered on a madira based soaked in Tequila and Grenadine, all fused with the best parts of a delicious trifle.

Method

  • Prepare your jellies, in individual bowls melt each set of jelly cubes in 1/4 pint hot water, when melted add in another 1/4 pint cold water. Leave to one side to cool.
  • Peel the oranges and loosen to segments.
  • Take pineapple rings and seperate the juice. Cut the rings into half.
  • Using the juice of the pineapples, combine with sugar and custard powder and simmer until thickened.
  • Take the Madeira cake and cut into small cubes.
  • Once all your elements are prepared, start to assemble your trifles.
  • Start by placing a few of the madira cubes in the base, drizzle over 1 tbsp of Grenadine and a shot of tequila. Pour over raspberry jelly until just covering the sponge cubes. Leave to slightly set.
  • Place the orange segments around the edge of the set jelly, pour in some of the orange jelly and then add 3/4 of a shot of triple sec. Again leave to set.
  • For the top tier arrange the pineapple around the edge, fill the center with your premade pineapple custard.
  • Finally prepare some dream topping (or fresh whipped cream), cover the top and decorate with a fresh cherry and an orange slice to garnish.
