Coffee Rubbed Steak & Eggs Tacos

Coffee rubbed steak and eggs tacos, the perfect weekend brunch when you've got a little extra time on your hands.

Ingredients

    Steak
  • 2thick cut sirloin steaks
  • 2 tbspground coffee
  • 1 tspsmoked paprika
  • 1 tspground cumin
  • 1 tspground coriander
  • 1 tspgarlic granules
  • 1 tsphot chilli powder
  • 1 tspancho or chipotle chilli flakes
  • Salt, to taste
  • Vegetable oil
  • Unsalted butter
  • Tacos
  • Eggs
  • Corn tortillas
  • Avocado, sliced
  • Pickled chillies
  • Lime wedges
  • Salt and pepper
  • Hot sauce

The coffee in the spice rub not only tenderises the meat due to its acidity, but it also enhances the flavour of the steak without making it taste like coffee. The sugars in the coffee also help to get a great crust on the steak, so this works particularly well for thinner steaks that can't be in the pan too long. Win win!

Method

  • Start by mixing up the spice rub for the steak. Combine the ground coffee, spices, and salt. Pat dry the steaks.
  • Sprinkle generously over both sides of the steaks, and pat the rub into the steaks. If you have time, let the steaks sit uncovered in the fridge overnight. If not, then at least an hour should do.
  • Remove the steaks from the fridge at least 30 minutes before cooking, and brush off the rub. Try to get as much off as you can to avoid burning.
  • The best pan to use is stainless steel, but cast iron also works - anything that can get super hot. Add a small splash of oil to the pan and once it's hot enough it should ripple.
  • Add the steak, moving your hand away from you so you don't get splashed with hot oil. For medium rare, cook on the first side for 2 minutes before flipping. Once flipped, add in some butter and baste constantly for another 2 minutes.
  • This will depend on the thickness of your steak, so keep a meat thermometer on hand in case - pull the steak from the pan at around 45 C, as it'll continue to rise as it rests. Let it rest for at least 10 minutes before slicing against the grain.
  • While the steak rests, fry up your eggs. You can do this in the steak pan if there's not too many burnt bits, but if there is just fry up in a splash of oil. Season with salt and pepper. This is also a good time to warm your tortillas in a pan or over an open flame.
  • Assemble your tacos - corn tortillas, sliced avocado, fried eggs, and a dash of your favourite hot sauce to finish. Serve with a cup of coffee, and enjoy!
